Cookies 'N Creme Crispy Rice Treats

Perfect as a classroom treat or for Galentine's Day, these Crispy Rice Treats made with Classic Creme Cookies are super easy and super tasty. Swap in Peanut Butter Creme Cookies or Golden Creme Cookies for a lil' twist!
Ingredients:
12 Back to Nature Classic Creme Cookies
½ cup peanut butter
½ tsp vanilla
1 Tbs vegan butter
1 Tbs water
1 10 oz bag of vegan marshmallows
3 cups chocolate rice crisps
¼ cup vegan chocolate chunks/chips
Sprinkles of choice to decorate
Instructions:
- In a small bowl, break up 10 Classic Creme cookies into quarters. Set aside.
- In a large mixing bowl, mix together a base of peanut butter, vegan butter, water, and vegan marshmallows. Microwave for about a minute or until the marshmallows begin to get melty.
- Add in chocolate rice crips and Classic Creme cookies to the base and mix together. Pour into an 8x8 parchment-lined baking dish and let set (about 10-15 minutes in the fridge).
- Cut into bars, hearts, or any other desired shape.
- Melt vegan chocolate chunks or chips and if desired dip the bars into the melted chocolate and garnish with sprinkles to decorate. Enjoy.
